Authentically… North Indian!

Let us introduce one of our most sought after, staple dishes, the humble Biryani. Serving a selection of five variations, this dish can be enjoyed in all seasons. 

The Raj serves a Mughlai style biryani. 

The legend behind this style is by Queen Mumtaz Mahal, the chief Consort of Shah Jahan. She travelled to Moghul, India to visit her army troops. Upon meeting them, she found them to be undernourished. Feeling sorry for the soldiers, she asked the Chef to create a nutritional meal for them, which had to include rice and meat in one dish. This was how the dish was created in Mughlai kitchens. Thus the name of the style is derived from this story.

Our talented North Indian Chefs prepare this speciality with only the finest products. The basmati rice is imported from Amritsar and our spices are from Kerala, the home of Indian exotic fragrances and aromas. The three most important ingredients that make the ultimate biryani are star anise, saffron and javitri, tossed amongst the fluffy pearls of grain and spices. To add extra love to the dish, prawns, chicken, lamb or seafood are added according to the type ordered.
